Strawberry Banana Oat Bars

My girls are always asking if they can have a healthy snack which is a great thing if you have healthy snacks to give them 🙂 This recipe for Strawberry Banana Oat Bars came from


For the strawberry chia jam:

  • 2 cups frozen strawberries
  • 2 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract

For the oat bars:

  • 2 cups rolled oats, divided
  • 1 teaspoon baking powder
  • 2 medium sized ripe bananas, mashed
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract


Make the jam:
  1. Add the strawberries and maple syrup to a medium saucepan and cook for 15 minutes over medium heat. Be sure to stir often and use your spoon to break the strawberries apart further, if desired.
  2. Stir in the chia seeds and vanilla, continuing to cook for another 5 minutes.
  3. Remove from heat and allow the jam to cool 30 minutes.
Make the bars:
  1. Preheat oven to 375 degrees and prepare an 8×8 baking dish by lining it with parchment paper, leaving a few inches of overhang on the sides to allow for easy removal.
  2. Place 1 cup of oats in a food processor or blender, and process until they resemble a fine flour. Transfer the oat flour to a large mixing bowl, and add the remaining rolled oats and baking powder, mixing well.
  3. Add the mashed bananas, maple syrup, and vanilla extract, and mix until everything is well combined.
  4. Transfer 2/3 of the mixture into your prepared baking pan, making sure that it is pressed down tightly and evenly.
  5. Spread chia jam over mixture, making sure to only go within 1/4 inch of the edge to prevent the jam from burning.
  6. Sprinkle remaining oat mixture on top, breaking up bigger chunks and pressing down lightly.
  7. Bake for 25-30 minutes until the top turns a light golden brown.
  8. Remove from oven and allow to fully cool in pan before cutting into bars.
