Pumpkin And Black Bean Lasagna

Pumpkin And Black Bean Lasagna is a great mexican dish with the perfect blend of sweet and spicy. It is enchilada meets lasagna deliciousness 🙂


Enchilada-ish Sauce:

  • 1 1/2 cups vegetable broth
  • 1 1/2 cups plain tomato sauce
  • 2 cloves garlic, minced
  • 2-3 tablespoons chili powder
  • 1-2 tablespoons lime juice
  • 1 tablespoon tamari
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano


  • 2 teaspoons olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 3 cups cooked black beans
  • 1 cup fresh corn kernels
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1 1/2 cups canned pumpkin puree
  • 1 tablespoon lime juice
  • 2 teaspoons maple syrup
  • whole wheat tortillas
  • 1/2 cup soy sation cheese


  1. First, make the enchilada-ish sauce: Pour all ingredients into a medium sauce pan and bring to a gentle simmer, cooking for 15 minutes until thickened, stirring often.
  2. Make the filling: In a large skillet, heat the olive oil over medium heat. Add the onion and saute 5 minutes. Add bell pepper and cook for 2 minutes. Add the garlic, black beans and corn, stir mixture, then cook 2-3 minutes. Add the chili powder, cumin, smoked paprika and salt. Let the spices cook a minute or so then fold in the pumpkin, lime juice and maple syrup. Cook the entire mixture another 1-2 minutes before turning off the heat.
  3. Heat oven to 375 degrees.
  4. Time to assemble: Pour 3/4 cup of sauce into bottom of 9×13 baking dish. Cover sauce with a layer of tortillas. Spread an even layer of filling(use 1/2). Cover with another layer of tortillas and 3/4 cup sauce. Spread remaining filling over sauce then cover with a layer of tortillas. Pour remaining sauce over top.
  5. Cover with foil and bake for 15 minutes.
  6. Top with cheese and bake uncovered additional 10 minutes.
  7. Serve with side of salsa and avocado slices.
