Damn Good Chili

It was a little odd making chili this afternoon with it being so warm outside here in Southern California but it got approval from the girls 🙂 I think this is the first time I have made chili in 2-3 years so I was excited it turned out so well.

Ingredients:

  • 2 pounds ground beef
  • 4 tablespoons olive oil
  • 1 white onion, chopped
  • 1 green pepper, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon parsley flakes
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon sugar
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black ground pepper
  • 1/4 teaspoon cayenne pepper
  • 46 ounces tomato juice
  • 28 ounce can diced tomatoes
  • 15 ounce can tomato sauce
  • 16 ounce can kidney beans, drained and rinsed
  • 1 cup elbow macaroni
  • shredded cheese
  • sour cream
  • crackers

Directions:

  1. In a large skillet, brown ground beef then drain and place meat in bowl.
  2. Heat the olive oil then add the onion, green pepper, garlic and parsley.
  3. Cook, stirring occasionally, for 5-7 minutes then place into large pot.
  4. Add the meat, chili powder, cumin, sugar, oregano, salt, pepper, cayenne pepper and stir until combined.
  5. Pour in the tomato juice, diced tomatoes, tomato sauce, kidney beans and elbow macaroni.
  6. Bring to a boil, then cover and simmer over low heat for 2 hours making sure to stir occasionally.
  7. Serve with cheese, sour cream and crackers.
