Melon Pichuberry Smoothie

Up until a couple of weeks ago I had never heard of a pichuberry let alone try one πŸ™‚ I found this Melon Pichuberry Smoothie recipe atΒ http://www.pichuberry.comΒ You can learn more about this fruit and find other recipes at their website.

Ingredients:

  • 1 cup melon
  • 3/4 cup pichuberries
  • 1/2 cup greek yogurt
  • 1/4 cup carrots
  • 3-4 fresh mint leaves
  • 1 cup coconut water

Directions:

Place ingredients into a blender and puree until smooth. This recipe makes 2 servings to enjoy πŸ™‚

Halloween Painting

This really hot woman I know, A.K.A my wife, text me last week to say we should do this cute Halloween painting with our daughter πŸ™‚

Supplies:

  • 11×14 canvas
  • paint-purple, white, black and pink
  • pallette (paint holder)
  • paint brushes
  • letter stencils
  • colored pencil
  • permanent marker
  • little hand and foot πŸ™‚

Directions:

  1. Paint the canvas purple and let dry.
  2. Use colored pencil to lightly sketch spider web and paint white.
  3. Trace letters with stencils then paint black.
  4. Make white footprint ghost and black handprint spider. Add faces.
  5. Write child’s name and date on back of painting with permanent marker.

I love these paintings that use the kiddos hands and feet as they make great keepsakes πŸ™‚

Honey Mustard Chicken

I made this Honey Mustard Chicken for dinner a few nights ago. My wife and 3 year old keep asking when I am going to make it again πŸ™‚

Ingredients:

  • 8-10 boneless chicken thighs
  • 1/3 cup Grey Poupon dijon mustard
  • 1/3 cup honey
  • 1 tablespoon olive oil
  • 2 teaspoons rosemary
  • salt
  • pepper
  • large ziploc bag

Directions:

  1. In a small bowl, mix together mustard, honey, oil and rosemary.
  2. Place chicken into large ziploc bag; pour in honey mustard mixture and marinate in fridge for 3-4 hours.
  3. Preheat oven to 350 degrees.
  4. Use tongs to lay chicken into 9×13 baking dish then pour marinade over top. Salt and pepper.
  5. Bake for 40-45 minutes.
  6. Serve chicken with rice and enjoy πŸ™‚

Cream Cheese Danish

I wasn’t feeling very well today so I tried to use what I had around the house to make dinner and dessert. I came across this 5-minute cream cheese danish recipe from http://www.craftybutt.blogspot.com that is fantastic πŸ™‚

Ingredients:

  • 1 package Grands Big & Flaky crescent rolls
  • 8 ounce cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 large egg
  • pinch of salt

Glaze:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 tablespoon milk

Directions:

  1. Preheat oven to 375 degrees and line a cookie sheet with foil.
  2. Mix cream cheese, powdered sugar, egg and salt until smooth.
  3. Unroll crescents onto wax paper and divide into half then pinch seams.
  4. Use a knife to score the edges then fill each with filling.Β IMG_7282
  5. Fold the bottom of your dough and tuck it around the filling. Cross one little flap over then the other side until you reach the top. Tuck the top around filling.
  6. Carefully transfer danish onto foil lined sheet and bake 14-18 minutes. Place on wire rack to cool.
  7. To make the glaze whisk together the powdered sugar, vanilla and milk until smooth.
  8. Drizzle glaze over cooled danish and enjoy πŸ™‚

Who doesn’t love to carve a pumpkin? Once you get all the “guts” out it is all positive. You get to create your own masterpiece with little artistic ability required. Plus you get to roast the seeds…all upsides πŸ™‚

I highly recommend http://www.pumpkinpile.com for hundreds of FREEΒ pumpkin carving patterns and stencils. This site also offers instructions and helpful tips for getting the best results.

*Buying a decent pumpkin carving set is a good investment and will last you for years.

No matter what you create, carving pumpkins is a fun time to hang out together as a family πŸ™‚
