Snickerdoodle Bars

When I found this recipe for “The Best Snickerdoodle Bars” at I was concerned if something so easy to make would really be great tasting. After making this recipe I discovered an easier way to get my snickerdoodle fix from the traditional cookie 🙂



  • 1/2 cup unsalted butter
  • 1 egg
  • 1/2 cup sugar
  • 1/3 cup light brown sugar; packed
  • 1 teaspoon vanilla
  • 1 cup all purpose flour
  • 1/4 teaspoon cream of tarter
  • 1/8 teaspoon salt


  • 1/4 cup sugar
  • 2 teaspoons cinnamon


  1. Preheat oven to 350 degrees. Line 8×8 baking pan with foil and spray with nonstick cooking spray.
  2. In a medium microwave safe bowl, melt butter.
  3. Add vanilla, both sugars, egg and whisk until smooth.
  4. Add cream of tarter, salt and flour; stir until just combined: DO NOT OVERMIX
  5. Pour batter into prepared 8×8 pan.
  6. In a small bowl, stir together sugar and cinnamon for topping then sprinkle over batter with a spoon.
  7. Bake for 22-25 minutes until toothpick inserted comes out clean. Cool before enjoying 🙂
