Cream Cheese Filled Pumpkin Bread

With fall upon us and everyone talking about pumpkin flavored stuff I decided  to make this Cream Cheese Filled Pumpkin Bread recipe I found at It was awesome and, after her initial hesitation, my 3 year old gave it a try….she LOVED it 🙂



  • 1 1/4 cup pumpkin puree
  • 1/2 cup light brown sugar, packed
  • 1/4 cup sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt

Cream Cheese Filling:

  • 1 large egg
  • 6 ounces cream cheese, softened
  • 1/4 cup sugar
  • 3 tablespoons flour


  1. Preheat oven to 350 degrees.
  2. Spray 9×5 loaf pan with floured cooking spray.
  3. Bread-In a large bowl, whisk together the first 10 ingredients.
  4. Add the flour, baking powder, baking soda and salt then stir gently with a spoon until just combined. DO NOT OVERMIX
  5. Cream Cheese Filling-In a large bowl, add all the ingredients and use hand mixer to combine.
  6. Spoon about two-thirds of the bread mix into loaf pan, smoothing and pushing into the corners.
  7. Pour the cream cheese mixture on top, smoothing and pushing into the corners.
  8. Top filling with remaining pumpkin batter, carefully smoothing and pushing into the corners.
  9. Bake for 45-55 minutes or until toothpick inserted in center comes out clean.
  10. Cool bread for 15 minutes before serving.



Parmesan Pork Chops

My wife is not a fan of pork chops so I was not surprised by her lack of enthusiasm when I told her what was for dinner. I was very surprised when she said these may have been the best ones she has ever tasted 🙂


  • 3-4 boneless pork chops, 1/2 inch thick
  • 1 tablespoon olive oil
  • 2 cups freshly grated parmesan cheese
  • 1 1/2 cups Italian bread crumbs
  • seasoned salt
  • pepper
  • garlic powder


  1. Preheat oven to 350 degrees.
  2. Line a pan with aluminum foil and spray with nonstick cooking spray.
  3. Brush pork chops with olive oil then season with garlic powder, pepper and seasoned salt.
  4. Cover both sides of pork chops with parmesan making sure to press cheese into meat so it sticks.
  5. Place chops into bowl of bread crumbs making sure each side is well coated.
  6. Bake for 40-50 minutes.


Strawberry Banana Bread

My youngest daughter loves fresh strawberries and bananas so I figured this was the perfect bread for her. I never knew everyone would love it so much 🙂


  • 1/4 cup (1/2 stick) butter; softened
  • 1/2 cup sugar
  • 1 large egg; beaten
  • 2 ripe bananas; mashed
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped strawberries tossed with 1/2 tablespoon flour


  1. Preheat oven to 375 degrees.
  2. Spray 9×5 loaf pan with nonstick baking spray.
  3. In a medium bowl, use a mixer to cream butter and sugar together.
  4. Mix egg and mashed bananas into sugar mixture until combined.
  5. Sift flour, baking soda, and salt then slowly add to banana mixture and mix until just combined. DO NOT OVERMIX!
  6. Fold in flour covered strawberries.
  7. Pour batter into loaf pan and bake for 15 minutes.
  8. REDUCE heat to 350 degrees and bake for an additional 25-35 minutes until toothpick inserted into center comes out clean.
  9. Cool 15 minutes before serving.

Oven Fried Chicken

This oven fried chicken recipe tasted great and was super easy to prepare. I modified it from the one I found at


  • 10-15 fresh chicken breast strips
  • 6 tablespoons salted butter
  • 1 cup flour
  • 1 teaspoon salt
  • 2 tablespoons seasoning salt
  • 2 teaspoons pepper
  • 3 teaspoons paprika


  1. Preheat oven to 400 degrees.
  2. Combine all dry ingredients into a large ziploc bag then add chicken and shake until well coated.
  3. Place butter onto large dark non-stick baking sheet and stick into oven until butter is melted.
  4. Remove baking sheet from the oven once butter has melted and place chicken onto it making sure to leave space between each strip.
  5. Bake 10-12 minutes, gently flip with tongs and bake other side another 10-12 minutes or until chicken is cooked. (Thicker pieces may require additional time)

I served with some mashed potatoes and steamed broccoli 🙂


Crispy Cheddar Chicken

I am always looking for new recipes to try…my poor wife is always my guinea pig on my experiments 🙂 This recipe was adapted from


  • 4 chicken breasts
  • 2 sleeves Garlic Butter Ritz crackers
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup milk
  • 2 cups cheddar cheese
  • 1 cup freshly grated mozzarella cheese
  • 10 ounce can cream of chicken soup
  • 4 tablespoons sour cream
  • 2 tablespoons butter


  1. Preheat oven to 400 degrees.
  2. Cut each chicken breast into 3 pieces.
  3. Place crackers, salt and pepper into ziploc bag then crush.
  4. Pour milk, cheddar cheese and cracker crumbs into 3 separate small bowls.
  5. Spray a 9×13 baking dish with non-stick cooking oil.
  6. Dip each piece of chicken into the milk then the cheese and finally the cracker crumbs. (Make sure you press the cheese and crackers into the chicken so it sticks.)
  7. Place chicken into baking dish, cover with aluminum foil and bake for 35 minutes.
  8. Remove foil, sprinkle mozzarella cheese over chicken then bake uncovered for 10 more minutes.
  9. In a medium sauce pan combine the cream of chicken, sour cream and butter. Whisk over medium heat until the sauce is hot then serve over chicken.
