Thank God For Kids

The Oak Ridge Boys always make me think of hanging out with my daddy as a child 🙂 The group is most known for other songs like “Elvira” but I have always liked this cute song.

One Dish Dinner

I found this amazing recipe at


  • 3 boneless, skinless chicken breast cut into chunks
  • fresh green beans
  • 1.5 pounds baby red potatoes, cubed
  • stick of butter; melted
  • 0.4 ounce package of ranch mix


  1. Preheat oven to 350 degrees.
  2. Spray bottom of 9×13 dish with nonstick cooking spray.
  3. Place chicken in middle of dish then potatoes on one side and the green beans on the other side.
  4. Top with ranch mix and butter.
  5. Cover with aluminum foil and cook for one hour.


Chicken Enchiladas

This is one of the best chicken enchilada recipes I have found and super yummy 🙂


  • 4 boneless, skinless chicken breast
  • 3 cups enchilada sauce
  • 1 cup diced onion
  • 4 ounce can of green chilies
  • 8 flour tortillas (10 inch)
  • 2-3 cups shredded monterey jack cheese
  • 2 chopped green onions (optional)


  1. Use a liner or spray crock pot with nonstick cooking oil.
  2. Add chicken and 2 cups enchilada sauce.
  3. Cook on high setting for 4 hours.
  4. Shred chicken then add in chilies and diced onion. Mix well and cook 15 minutes longer.
  5. Preheat oven to 350 degrees.
  6. Spray a 9×13 baking dish with nonstick oil.
  7. Spoon chicken mixture onto tortilla, add cheese and fold. Place seam down into dish. Repeat.
  8. Pour remaining enchilada sauce over assembled tortillas then top with cheese.
  9. Bake for 20 minutes.
  10. Garnish with green onions.

Easy Dinner Casserole

A few days ago I was trying to find something easy to make for dinner when I found this recipe from

Things you need:

  • 3-4 large potatoes, peeled and diced
  • 2 large boneless, skinless chicken breast, diced
  • 4-6 slices cooked bacon, crumbled
  • 1 1/2 cups shredded cheese
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 1/2 cup heavy cream
  • 2 tablespoons butter, cut into pieces
  • 4 chopped green onions (optional)


  1. Preheat oven to 350 degrees.
  2. Grease 9×9 baking dish.
  3. Spread half the potatoes in the dish then the chicken.
  4. Season chicken with 1/4 teaspoon each of seasoned salt and pepper.
  5. Layer half the bacon, 1/2 cup cheese cheese and half the onions.
  6. Top with remaining potatoes, bacon, 1/2 cup cheese, onions salt and pepper.
  7. Pour heavy cream over casserole and dot with butter.
  8. Cover with aluminum foil and bake for 1 hour.
  9. Uncover and bake 30 minutes. Top with remaining 1/2 cup cheese during final minutes.


Grilled Ham & Cheese

I decided to use leftover Easter ham to make this amazing sandwich.


  • sliced ham
  • 2 slices of bread
  • mayonnaise
  • mustard
  • 3-4 slices swiss cheese
  • 1 tablespoon butter
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar


  1. Put mayo on one slice of bread and mustard on the other.
  2. Layer with ham and cheese, then assemble sandwich.
  3. Melt butter in skillet.
  4. Beat eggs, cinnamon and sugar in bowl.
  5. Coat sandwich in egg mixture then grill for 2-3 minutes per side.
